Whole Wheat Banana Bread Squares



mThe first thing I ever baked from scratch was banana bread, I think I was 11. I don't think I had ever had banana bread before that, but I always loved banana's. I've tried many versions of banana bread since (fat free, sugar free, etc) and have now settling on this recipe. This recipe is sweetened with honey and made whole wheat for to give you a healthy week night snack. I love making them in squares or muffins, they bake much faster and they are pre-portioned.

Whole Wheat Banana Bread
1/3rd Cup of Safflower Oil
1/2 Cup of Honey
1 Tsp Vanilla Extract
2 Eggs
2 Medium Bananas, mashed
1 3/4 Cup of Whole Wheat Flour
2 Tbsp Ground Flax seed
1/2 Tsp Cinnamon
1/2 Tsp Salt
1 Tsp Baking Soda
1/4 Cup of Hot Water

Preheat Oven to 325
Tip* When substituting honey for sugar you will want to drop the temperature, if you're using sugar, preheat oven to 350. 

In a large bowl beat together oil & honey. Add eggs and mix well. Stir in bananas & vanilla, stir in flour, ground flax seed, salt & cinnamon . Mix baking soda and hot water, stir, add to batter and mix until all ingredients and blended.
Add 1/4th cup of batter to each square or muffin cup.

Bake 15 - 17 minutes or until toothpick is clean when inserted & removed from center.

If you really want to dress this up, drizzle some caramel sauce on top & fresh slices of banana. :)
