Tropical Chipotle BBQ Sauce

 If you're a BBQ lover, having your own signature sauce is a must. With grilling season just around the corner here is my signature summer sauce. It's one I've altered over and over until the final product was exactly what I wanted. This is sweet sauce with just enough of a kick to make you notice and a hint of tropical flavor that is sure to be a crowd pleaser.

2 Tablespoons of Butter
1 Shallot Minced Fine
2 Tablespoons Minced Garlic
1/4 Cup Chipotle Chilies in Adobo Sauce, Blended till Smooth
1/2 Cup Fresh Mango, Blended Smooth
1/4 Cup Fresh Pineapple, Blended Smooth
3/4 Cup Ketchup
3 Tablespoons Apple Cider Vinegar
1 Tablespoon Worcestershire Sauce
1/4 Cup Brown Sugar (Light or Dark)
*If you find the sauce is too thick (which can happen if the fruit isn't that juicy) add a few tablespoons of pineapple juice until you get a consistency you like.

 Melt the butter is a large pan on medium high heat (Just past medium) & cook shallots until translucent, 3 - 5 minutes, then add the garlic and cook a minute or 2 more, watching closely so the garlic doesn't burn. Lower your heat to low and stir in all of your other ingredients. Simmer another 3 - 5 minutes to melt the sugar and get the flavors mingling together.
  Now you're all ready to get outside, brush this onto some chicken and make a lot of people (or just yourself) happy.

*If you don't have a food processor and your blender is having a hard time blending the chili's because of the small quantity, you might find it easier to chop the chili's up and when the sauce is cooked, add the sauce to the blender and blend till smooth. The extra chili's can be frozen for future use.
