Everyday Lemon Garlic Shrimp

This is a SUPER easy shrimp recipe for weekday cooking that will leave you with very little kitchen clean up. The same rule that applies to fish applies to shrimp, fresh is always best! If you live in an area where you can't get fresh seafood, I was recently introduced to this great online site www.FishEx.com. The jumbo spot shrimp are out of this world good. The best I have ever had and I have had a lot of shrimp.
Now I have read a lot about farm raised vs. wild caught and based off my research I do recommend wild caught. I have recently started seeing organic farm raised, but I've yet to find any good information on organic vs. wild caught. If anyone finds research please feel free to share the link in the comment area below.

1 Pound of Shrimp, shelled & cleaned
1 Lemon, Zest & Juice
1 - 2 Tablespoons of Garlic (How much do you like garlic?)
1/3 Cup of Fresh Chopped Parsley
1 Tablespoon Olive Oil
1/3 Teaspoon of Salt

Mix together lemon juice, zest, garlic, parsley olive oil & salt. Then add the shrimp & toss to coat. Let this marinade no longer than 5 minutes. Shrimp doesn't need to marinade long and if you leave it too long in lemon juice you'll have yourself some ceviche. :)

Add shrimp to foil lined pan.

Broil on high, middle rack, 3 - 5 minutes depending on the shrimp size. You will know when the shrimp is cooked when it is bright pink & white.

Enjoy!
